Mushroom Curry (No Coconut)

Mushroom Curry Ingredients :

Onion – 2
Tomato – 1
Mushroom – 1 cup

Coriander powder – 4 tsp
Milk – 1 cup
oil – 6 tsp
coriander leaves

Mushroom Curry Preparation :

Heat oil in a pan Add the onions along with jeera .
Add the red chillies with coriander powder , with the curry leaves and turmeric powder. Grind them well.

Then heat oil add the mustard seeds , with curry leaves. Then add the onions, after golden brown, add the mushrooms and after they well fried add the ground paste.

After the curry comes to a boil, add the milk along with the
coriander leaves.

Bring them to a nice boil and serve them with rice

Tomato rice

Tomato rice Ingredients :

Rice – 3 cups

Tomato- 2

Ginger,  garlic finely chopped – 200 gms

Coriander powder – 1/2 spoon

chilli powder – 1 spoon

peanuts – 100 gms

coriander leaves

salt to taste

Chana dal, urad dal,mustard seeds,red chillies to garnish

Tomato rice Preparation :

1) Heat some oil in a pan

2) Fry the mustard seeds, chana dal,urad dal and the red chillies

3) Add onions and tomatoes to the oil fry them well

4) Add chilli powder, peanuts and coriander powder to the oil and let them blend with the mixture

5) Add some salt to taste

6) finally add the coriander leaves .

7) Boil the rice separately and leave them in a plate and let the rice to cool down.

8) Add the mixture to the white rice.

Coconut Rice

Coconut Rice Ingredients :

Rice – 3 cups

Grated coconut – 400 gms

Garlic finely chopped – 200 gms

Coriander leaves

Cashew nuts – 100 gms

salt to taste

Chana dal, urad dal, mustard seeds, red chillies to garnish

Coconut Rice Tip :

With Coconut oil  the rice tastes better

Preparation :

1) Heat some oil in a pan

4) Add  peanuts and grated coconut to the oil and let them blend with the mixture

5) Add some salt to taste

6) finally add the coriander leaves .

Tamarind Rice

Tamarind Rice Ingredients :

Rice – 3 cups

Tamarind water – 50 gms

garlic finely chopped – 200 gms

Coriander powder – 1/2 spoon

chilli powder – 1 spoon

salt to taste

Chana dal, urad dal,mustard seeds,red chillies to garnish

Tamarind Rice Tip :

If you fry and grind fenugreek seeds along with others it adds more flavor

Vegetable Briyani (light)  Ingredients :

Basmathi Rice  – 4 cups

Ginger & garlic paste- 200 gms

Garam Masala powder – 2 sp

Vegetable Briyani (light) Tip :
More ghee gives good taste

The Basmathi rice if soaked 1/2 hour before the food is cooked gives good taste

3) Add mint leaves,  coriander leaves,  green chillies to the ghee

4) Add ginger & garlic paste to it

5) Then add garam masala  and chilli powder, carrots,  peas and beans  to it

6) Add water to the mixture,  add 2 cups of water for 1 cup and add salt to taste .

7) bring the mixture to a boil and add the rice

8) Add the lemon juice to it and then let the rice to be cooked.

Bise Bela Bath

Bise Bela Bath Ingredients:

Cook 2 cups of dal with 4 cups of rice
Fry 12 tsp of dhaniya with coconut – 1/2 cup

Bise Bela Bath Preparation :

Then heat some oil and then add onions 1 chopped fine and curry leavesThen add ( cooked vegetables carrot , beans , peas, potato) and then add the ground curry paste and then add the cooked rice. Let them cook for about 20 minutes .

Vegetable Briyani (Heavy) Ingredients :

Basmathi Rice  – 4 cups

Ginger & garlic paste- 200 gms

Green chillies – 6

Onion finely chopped – 1

coconut milk  – 4 cups(thick)

cashew nuts – 100 gms

Ghee – 200 gms

Carrot & beans finely cut

Peas – 100 gms

Garam Masala powder – 2 sp

Chilli powder – 3 sp

Mint leaves & coriander leaves

lemon – 1/2

Vegetable Briyani (Heavy) Tip :

More ghee gives good taste

The Basmathi rice if soaked 1/2 hour before the food is cooked gives good taste
It is good if you dilute the coconut milk,  in the ratio of 1 cup of rice to 2 cups of diluted coconut milk

1) Add ghee to a pan fry the onions and tomatoes

2)Grind  cashew nuts, cloves, cinamon, cardamom, green chillies mint and coriander leaves.

3) Add  the mixture to the ghee

4) Add ginger & garlic paste to it

5) Then add garam masala  and chilli powder, carrots,  peas and beans  to it

6) Add coconut milk  to the mixture,  add 2 cups of coconut milk for 1 cup and add salt to taste .

7) bring the mixture to a boil and add the rice

8) Add the lemon juice to it and then let the rice to be cooked.

Paruppu (Chana Dal) Rice

Paruppu (Chana Dal) Rice Ingredients :

Chana dal – 1 cup

Rice 4 cups

Onion – 1

Tomato – 1

Turmeric powder – 1 tsp

chilli powder – 1 tsp

Curry leaves

Red chillies – 4

Salt
Mustard seeds

Paruppu (Chana Dal) Rice Preparation :

Heat some oil in the pressure cooker

Add the mustard seeds, then add the red chillies, curry leaves along with the garlic

Add the onion and fry them till they are golden brown.

Then add the tomatoes.

When the tomatoes are cooked add the water 21/4 cups of water for 1 cup of rice.

Then when the water starts to boil add salt and chilli powder along with turmeric powder

Then add the rice and paruppu(dal) and close the cooker and let it cook for about 4 whistles in a low flame.

Open the lid of the cooker after 15 minutes after turning the flame off

Finally add the coriander leaves before serving

Paruppu (Chana Dal) Rice Tip :

It is good if you soak the paruppu(dal) along with the rice for about 1/2 hour

Vegeterian Pulov

Vegeterian Pulov Ingredients :
Basmati Rice ¼ kg.
Carrots, chopped 25 gms.
French beans, chopped 25 gms.
Cauliflower, chopped 25 gms.
Peas 25 gms.
Cloves  2 nos.
Cardamons 2 nos.
Cinnamon 2 pieces
Onion, sliced 2 nos.
Ginger, crushed  ¼” piece

Garlic, crushed  3 flakes
Chili powder ¼ tbsp.
Turmeric powder A pinch
Coriander, chopped 1 tbsp.
Green chili 3 nos.
Water 2 ½ cups
Ghee 3 tbsps.
Salt To taste

Vegeterian Pulov Preparation :

1.Heat ghee in a cooker, then add the cloves, cardamons, cinnamom, sliced
onions and fry for a while.

2.Next add the ginger garlic and saute till you get a nice aroma.

3.Add the rice, stir for a while then add vegetables, chili powder, turmeric powder,
coriander leaves, green chilies, salt and water.

4.Close the cooker lid and pressure cook for 5 minutes.

5.Remove from heat and serve hot with raita or pickle.
